Vegetarian Taco

This taco is perfect for a quick lunch. It's also healthy and very tasty. The taco is perfect for hot summer days because it's light and refreshing.

Ingredients:

  • 4 Tortillas

  • 2 Tomatoes

  • 1 Zucchini

  • 2 Carrots

  • 3 Eggs

  • 3 Tablespoons Yogurt

  • 2 Tablespoons Sour cream

  • 1 Clove garlic

  • 1 Avocado

  • 1 Lime

  • Guacamole spices

  • Basil

1. Dice all the vegetables into small cubes, except the avocado

2. Heat up a pan with olive oil and cook the vegetables until tender. Season with pepper and salt.

3. Take the avocado and slice it in half and take out the green parts of the avocado.

4. Season it with the guacamole spices and add a tablespoon of lime juice.

5. For the yogurt dressing, mix the sour cream and the yogurt. Mince the garlic and add it to the mixture. Add a little bit of lime juice and season with pepper and salt.

6. Take a pan and heat up some olive oil in it. Add the eggs and keep stirring until the eggs are cooked.

7. Heat up the tortillas

8. Put the tortillas on a plate and first put some guacamole on the tortilla then add the vegetables and the eggs. Last put some dressing on top of it and garnish with some basil.
